Irish Beef and Guinness Stew

Serve up some seriously rich flavor this St. Patrick’s Day with this traditional Irish Beer and Guinness Stew! A real crowd-pleaser, it will certainly feed a bigger group. Make it with Irish Soda Bread and serve up a feast!

Guinness and Beef Stew

Beed & Guinness Stew

Makes: 8-12 Servings

Ingredients:

6 Slices Thick-Cut Bacon
2 Lbs Beef Chuck
2 Tbl All-Purpose Flour
1 Large Yellow Onion
2 Large Carrots, Diced
2 Stalks Celery, Diced
16 Oz Guinness Beer
1 Cup Beef Broth
12 Golden Baby Potatoes, Halved
3 Tsp Minced Garlic
2 Tbl Worcestershire Sauce
1/4 Cup Tomato Paste
1 Tsp Dried Thyme
1 Tsp Dried Rosemary
1 1/2 Tsp Salt
1/2 Tsp Pepper
2 Bay Leaves

Instructions:

  • In a large Dutch oven, cook the bacon with olive oil.
  • While the bacon cooks, cut the beef into bite-sized pieces, season with salt and pepper, and toss with the 2 Tbl of flour.
  • When the bacon is done cooking, remove it from the pot with tongs and set it aside on a large plate.
  • Brown the beef in 2 portions to avoid overcrowding the pot. Add the cooked beef to the plate of bacon and set aside.
  • Add the onions to the pot with a little more olive oil. Cook for 7 minutes.
  • Add the celery and carrots and cook for another 5 minutes.
  • Pour in the Guinness Beer and bring it to a boil. Scrape the bottom of the pot as you stir with a wooden spatula to get all the cooked down flavor mixed in.
  • Add the rest of the ingredients, stir, cover, and turn down the heat to medium-low.
  • Cook for an additional 2 hours.
