How To: Christmas Meringues!

How To: Christmas Meringues!

These pretty meringues are just two ingredients and so easy to make!  With their batter being mostly egg whites and air, they’re only about 20 calories each making these little desserts just about the best thing ever!

You’ll need 3 eggs and 3/4 cup fine sugar for your basic meringue mixture.  You can add food coloring to get the different colors and you’ll want to grab some pastry bags and tips to get the pretty shapes.  If you don’t have any pretty tips or pastry bags, I’ve used Ziploc bags in the past and just cut out a centimeter hole on a corner to make a “kiss” shape tip.

The difficult part of this recipe is getting that exact consistency just right.

  • You’re going to start by separating your egg whites and whisking on high in an electric mixer until soft peeks form.  Then, gradually add your sugar a little bit at a time until the mixture becomes stiffer and the sugar dissolves.

If you whisk those egg whites long enough, the result should look like this…

The whisk attachment will pull away from the rest of the batter in a long trail that stands upright.

  • Line a baking sheet with parchment paper and design your meringues leaving at least an inch of space between them.

The baking process is more about drying the meringues out rather than heating them up.  Times will vary from kitchen to kitchen due to environmental differences.  I live in Florida where it is very hot and humid.

  • I bake them in my oven for about 2 1/2 – 3 hours at 200F and then I leave them in the oven for another 2 hours to cool after I turn the oven off.

What you’ll get are these light and crisp, delicate cookies!  They should be completely dry and crisp all the way through.  I check on them often starting at about 2 hours into the baking process by taking bites!  Yum!  Don’t worry, the batter makes plenty. To add the color, I used a few drops of food coloring to about a tablespoon of batter and lined a pastry bag with a stripe of color batter before adding the rest of the white mixture.  You’ll need multiple pastry bags and tips to get the different shapes on these Christmas Tree Pops.
