Sweet Potato Fries
One of my favorite things to grow in the garden is sweet potatoes! They are so easy and have gorgeous, vining foliage to pretty up any large pot or vegetable garden bed. They produce a wonderful treasure hunt of root veggies. You can continuously grow them with budding scraps from your leftovers. And the cooking options are endless! A truly magical root vegetable. Here is my favorite sweet potato fries recipe!
Sweet Potato Fries
Ingredients:
- 1 Large Sweet Potato
- 2 Tbl Olive Oil
- 1 Tsp Paprika
- 1 Tsp Garlic Powder
- 1 Tsp Salt
- 1/4 Tsp Pepper
Directions:
- Preheat the oven to 400F.
- Wash and cut the sweet potato into thinly shaped fries.
- Evenly lay out the sweet potato fries on a parchment paper-lined baking sheet.
- Toss in Olive Oil and generously sprinkle with garlic powder, salt, and pepper until they are evenly coated.
- Bake for 25 minutes or until cooked through.
- Season with paprika and more salt for taste.
