1. Patrick Avocado Toasts
Starting with breakfast, avocado immediately came to mind with its rich green color. And who doesn’t LOVE the avocado toast trend!? Dress it up with even further with shamrock-shaped toppings like this egg which I simply cooked first and then cut with a cookie cutter.
2. Super Greens Soup
Keep the theme going all day with a healthy lunch full of your favorite blended greens. Add delicious cream to top it off and cilantro leaves which mimic the look of a clover.
3. Shamrock Chips
These chips with guacamole are the perfect appetizer! Grab some spinach tortillas from your local grocery store and cut with your smaller sized cookie cutter to create these perfect shamrocks. Toss them with oil and any seasoning you like, pop them in the oven for 8-10 minutes at 350 degrees.
4. Basil Linguini
For dinner, go all out and make some delicious basil linguini from scratch! I’ve been promising a pasta-making tutorial and it’s coming… but for now, feast your eyes and get excited! FRESH PASTA IS THE BEST PASTA!
5. Kiwi Lemon Tart
This recipe is based on my favorite tart recipe which can be found on the blog, Happy Foods Tube! I added juice from one kiwi and a few drops of green food coloring. Embellish with green meringues and shamrock sprinkles for an over the top gorgeous green tart! If you don’t know how to make meringues, I highly suggest this post!
6. Shamrock Shakes
The sprinkle rim is the real star here. Melt white chocolate chips and dip the rim of your glass to evenly cover. Dip that chocolate rim in a bowl of sprinkles and immediately refrigerate for a few minutes. This will create a hard as rock rim that will not melt or fall apart. Fill the glass with your favorite green ice cream flavor milkshake like this mint chocolate chip and serve!
7. Lucky Charmwiches
A simple take on ice cream sandwiches. You can make these yourself or use the store-bought ones and dress them up with lucky charms marshmallows. You will need to do some digging and separate enough marshmallows from the cereal box. Crunch them up in a bowl and then dip the sides of the sandwich to cover. Add a few whole marshmallows here and there for this completed charmwich!
