Sparkler Ice Cream Sandwiches
These homemade ice cream sandwiches are a level-up for your Fourth of July celebrations! Served inside a warm glazed donut and rolled in festive sprinkles, they’re sure to be a hit. Especially with the addition of everyone’s favorite party favor, the sparkler! You will need an ice cream machine for this recipe or use store-bought ice cream. BUT! I use a Kitchenaid ice cream maker attachment. I can’t recommend this attachment more, I use it all the time. Homemade ice cream is the best!
Sparkler Ice Cream Sandwiches
Makes: 12 servings
Ingredients:
- 1 dozen glazed donuts
- 2 cups whole milk
- 2 cups heavy whipping cream
- 1 cup granulated sugar
- 2 tsp vanilla extract
- 1/4 tsp salt
- seasonal blue & white sprinkles
Directions:
- In a large mixing bowl, combine the milk, heavy cream, sugar, vanilla, and salt with a whisk.
- Fit your Kitchenaid with the ice cream maker attachment straight from the freezer and turn it on at the lowest speed.
- Slowly pour your ice cream mixture into the attachment bowl and continue to churn on low for 20 minutes. Alternatively, you can use any ice cream maker you have on hand, follow the instructions for your specific machine.
- Scrape down the sides of the frozen bowl into an ice cream container and freeze overnight. I LOVE these Tovolo Ice Cream Containers. They keep the ice cream so soft! I use two of them for this recipe.
- When you are ready to serve, slice open your donuts and warm for a few minutes in the oven, open side down on a baking sheet.
- To make the layering of the ice cream sandwiches easy on myself, I scoop the ice cream onto a piece of parchment paper, cover with another piece of parchment paper, and roll with a rolling pin into a flat 2″ thick rectangle. I then cut into circles with a cookie cutter to transfer. This is an optional tip!
- Finally, roll the assembled ice cream sandwiches in sprinkles and serve! I stacked mine in groups of three with sparklers for presentation.
