Soft and Chewy Ginger Cookies
These soft and chewy ginger cookies are the perfect Christmas cookie! They pack a punch of flavor for all you ginger lovers. With chunks of crystallized ginger and a load of spices, they are as tasty as they look.
Soft and Chewy Ginger Cookies
Makes: 20 cookies
Ingredients:
- 3/4 cup unsalted butter, softened
- 1/2 cup dark brown sugar, tightly packed
- 1/4 cup granulated sugar
- 1/4 cup dark molasses
- 1 large egg
- 2 tsp vanilla extract
- 2 1/2 cup all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 tsp ground ginger
- 1 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped crystallized ginger
- coarse sugar for coating
Directions:
- In the bowl of an electric stand mixer, cream together the butter, brown sugar, granulated sugar, molasses, egg, and vanilla.
- In a separate mixing bowl, whisk together the flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients and combine until a sticky dough forms.
- stir in the crystallized ginger with a rubber spatula.
- Wrap the dough in plastic wrap and refrigerate for 90 minutes.
- Preheat the oven to 350F and prepare two parchment paper-lined aluminum baking sheets.
- Roll a golf ball size piece of dough in the coarse sugar until well coated on all sides. Place on the prepared baking sheet and continue for all cookies.
- Bake at 350F for 12-13 minutes.
- If the cookies didn’t spread out and crack, press the tops down with the bottom of a flat glass before they cool.
