My Favorite Homemade Keto Snacks!
My favorite homemade keto snacks you can do at home! Easy and delicious. You won’t believe these are keto-friendly. I hope you love them as much as I do and work them into your diet so you can have guilt-free snackies all day everyday!!!
Keto Seasoned French Fries
Makes: 2 servings, about 20 fries
Ingredients:
- 1/2 cup olive oil for frying
-The Dough:
- 1/4+ cup coconut flour
- 3 tspn xanthan gum
- 8 tbsp hot water
-The Seasoning:
- 1 tbsp salt
- 1 tbsp paprika
- 1/2 tbsp garlic powder
- 1/4 tbsp cumin
- 1/4 tbsp pepper
- 1/4 tbsp dried basil
- 1/4 tbsp dried parsley
- 1/2 tspn chili powder
Directions:
- In a small bowl, combine the coconut flour and xanthan gum. Mix well with a spoon. Add the hot water and continue mixing with your hands until you can bring the mixture together in a ball. If the ball is too wet, add more coconut flour a little at a time until you get a nice workable dough ball.
- Flatten the ball into a thin, approx. 5×7″ rectangle with your hands and carefully slice into french fry thin slices. I usually get around 20 fries.
- In a small bowl, combine the seasoning, mix well, and set aside.
- Heat a medium-large skillet over medium heat.
- Add your french fries. Turn them over with a spatula or tongs when the 1st side browns. Continue cooking until all sides are brown and crisp. This is a slow fry on a lower heat so the fries soak up all that yummy oil, stay soft on the inside, and crisp on the outside! Be sure to keep an eye on them, and try one when they lightly brown to be sure they don’t overcook.
- Remove and place in a paper towel. Spoon seasoning over the fries, roll the fries around to evenly coat, and serve!
- I love to eat these with keto-friendly honey mustard or tartar sauce! But you can eat them plain or with any ket0-friendly sauce you have on hand. Also, try seasoning with old bay or salt and pepper! Yum!
Keto Candied Pecans
Makes: 2 cups
Ingredients:
- 1/2 cup erythritol
- 2 tbsp water
- 1/2 tspn vanilla extract
- 2 cups halved raw pecans
Directions:
- Prepare a parchment paper-lined baking sheet and set it aside.
- Preheat a small heavy bottom pot to medium heat and then add the erythritol, water, and vanilla.
- Gently whisk the mixture occasionally, allow the erythritol to completely dissolve and become clear.
- Remove from heat and pour over the pecans.
- As the mixture cools, it will start to harden. Mix the pecans gently around in the mixture until they are all evenly coated and the mixture is mostly solidified. Make sure the pecans are all separated and let cool completely on the counter.
- Store in an airtight container.
Waffle Iron Fried Pickles
Makes: 10 Fried Pickles
Ingredients:
- 3/4 cup shredded Monterey Jack Cheese
- 10 dill pickle chips
Directions:
- Preheat a waffle iron.
- Lay your pickles out on a paper towel to remove some excess juice.
- Add a pinch of cheese to the center of the iron, then one pickle, then a heaping tablespoon of cheese to the top. Close tight and cook for about 2 minutes or until the cheese is brown and crispy.
- Carefully remove the “fried pickle” with tongs and let cool on a paper towel.
- Eat hot with sour cream or your favorite sauce!
