Simple Galette Recipes

I love pie, that’s an understatement, I am obsessed with pie. That delicious warm crust and sweet filling topped with a cold scoop of ice cream is what I live for. I have been known to create some elaborate, time consuming pies in my day but sometimes I need to feed that craving fast! And that’s where the galette is the magical pastry of my quick fix dreams. To keep it quick and easy, I opt for store bought pie crust. So we’re only going to focus on fillings in this post…1. Apple Galette

Ingredients:
4 apples (of your favorite pie variety, I like Granny Smith!), peeled and thinly sliced
1/3 cup sugar
1/2 teaspoon ground cinnamon
1 tablespoon lemon juice
1 tablespoon unsalted butter, melted
1 egg

Directions:
Core, peel, and slice the apples into a large bowl and set aside. In a small bowl, combine together the sugar, cinnamon, butter, and lemon juice. Roll out the store bought pie dough on a parchment paper lined baking sheet and top with apple slices in a decorative pattern. I like to overlap the apple slices from the outside and work my way in to the middle to create a pinwheel design. Be sure to leave at least a 1 inch dough border around the apples for folding. Fold over the edge of the dough to overlap on to the apples and drizzle the sugar mixture over the apples to evenly coat. To get that perfectly golden brown crust, I brush a beaten egg (egg wash) around the edges. Bake at 400F for 45-60 minutes or until the apples are tender and the crust is golden brown.

*Tip! If the apples need to bake longer but the crust is already browning… try placing a tin foil tent over the galette and continue baking.For this next recipe, it’s a two in one! You can also substitute a number of other berries and fruits for this basic filling recipe…

2. Strawberry OR Blueberry Galettes!

Ingredients:
2 cups sliced strawberries OR 2 cups of blueberries
1/3 cup sugar
1 teaspoon vanilla extract
2 tablespoons all purpose flour
1 egg

Directions:
In a small bowl, mix together the sugar, vanilla, and flour. Add the sliced strawberries OR blueberries and gently stir to evenly coat the berries. Roll out the store bought pie dough on a parchment paper lined baking sheet. Add berry mixture to the center leaving at least a 1 inch border of pie crust around the edge. Fold over the edge of the pie crust to envelope the berries. Brush a whisked egg around the edges of the dough and bake at 400F for 45 minutes or until the crust is golden brown.

*Tip! If you like a sweeter crust, try sprinkling some sugar over your egg wash before baking!
