Ingredients:
- 2 tspn active dry yeast
- 4.5 tspn granulated sugar
- 1 ¼ cups warm water
- 3.5 cups bread flour
- 1.5 tspn salt
Directions:
- In a small bowl, combine 1/2 cup warm water with the sugar and yeast. Let sit and activate for 10 minutes.
- While the yeast is activating, stir together the flour and salt in an electric stand mixer bowl with a spoon.
- Add the yeast mixture to the bowl of flour along with the remaining warm water and knead on the lowest setting for 5 minutes.
- Remove the dough from the hook, form a ball, and cover the bowl with a dish towel. Let rise in a warm place for 1 hour, until the dough has doubled in size. Punch the dough down, and let it rest for another 10 minutes.
- Divide the dough into 8 equal pieces. Shape each piece into a round ball using the palms of your floured hands. Press your thumb into the center of each dough ball to form a ring. Stretch the ring to shape the bagel and place on a lightly oiled cookie sheet. Repeat the same step with the remaining dough.
- After shaping the bagels and placing them on the cookie sheet, cover with a kitchen towel and allow to rest for 10 minutes. Meanwhile, preheat your oven to 425F
- For savory bagels, bring a large pot of water to a boil. Reduce the heat. Use a slotted spoon to place the bagels into the water. Boil a few at a time to not overcrowd the pot. Allow the bagels to float to the top and sit there for 1 minute, then flip them over to boil for another minute. The longer you leave them in the water bath, the chewier the bagel will be. Place each bagel back on the parchment paper lined baking sheet. Generously brush with whisked egg and sprinkle with desired topping. For sweet bagels, skip the topping.
- Bake for 20 minutes or until golden brown.
- Cool on a wire rack.
- For cinnamon sugar bagels, brush the tops of each bagel with with melted butter before sprinkling a cinnamon sugar combination on top.
- Serve warm, or lightly toasted. Store in an airtight container once completely cooled.
