Lemon & Strawberry Tart
This is my absolute favorite lemon tart recipe which I originally found on happyfoodtubes and modified over time. It is so incredibly simple and you can add any toppings or other flavors in lieu of the strawberries for your basic lemon tart recipe or any other tart concoction you can dream up! If you like a very lemon-y tart, be sure to add a little extra juice!
The Crust:
Ingredients:
1 cup all purpose flour
1/2 cup unsalted butter, melted
4 Tblspns powdered sugar
Mix flour, melted butter, and sugar in a bowl with your hands until you get a soft (it will still be sticky) dough. Grease a tart pan thoroughly and press the dough with your fingers into the pan and up the sides until you get an even form along all the edges. I like to place a piece of parchment paper on top of the dough as I press it into the pan for a perfectly flat finish. Cut the excess edges off the top and pierce the crust several times with a fork. Lemon Filling:
Ingredients:
1/4 cup heavy whipping cream
1/4 cup sugar
1 large egg
1/3 cup fresh squeezed lemon juice
In a bowl, whisk together the sugar, egg, heavy whipping cream, and lemon juice. Carefully pour the mixture into the cooled tart crust. I like to do this part on the oven rack pulled out just far enough for comfort to reduce movement from the counter to the oven. Continue baking for 35 minutes or until the filling is set. Allow the tart to cool completely before attempting to remove it from the tart pan. Dust with powdered sugar and a thick layer of sliced strawberries. Slice with a sharp knife and enjoy!
