Garden Fresh Tomato Soup
(recipe adapted from allrecipes.com)
Ingredients:
4 Fresh Tomatoes, Chopped
1 Onion, Chopped
4 Cloves of Garlic, Minced
2 Cups Chicken Broth
2 Tablespoons Unsalted Butter
2 Tablespoons All-Purpose Flour
Salt & Sugar to Taste
Sliced Mozzarella & Basil for Garnish
Recipe:
-In a large soup pot, combine the tomatoes, onion, cloves, and chicken broth. Bring to a boil, and cook for 20 minutes. Pour mixture in a large bowl and use an emersion blender to purée the mixture.
-In the same soup pot, melt the butter over medium heat. Stir in the flour to make a roux, cook until the roux is a medium brown. Gradually whisk in the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to your liking. Top with a slice of mozzarella and a basil leaf for garnish.
For this next recipe… mix up a classic broccoli cheddar soup with a stronger flavor cheddar like my favorite, smoked! Leave out all the other usual seasonings with this recipe to allow that smokey flavor to shine!

And finally, for dessert, I served the initial inspiration for this entire party! My wonderful friend’s gorgeous cookie creations.
I had this idea to create A Haunted House Cookie Cake that we could backlight like a Jack-O-Lantern! I sent my design to Angie and she created these gorgeous black icing, chocolate cookies that we stacked in the shape of a house. Backlit with candles, it is one of my favorite dessert ideas to date! Aren’t the sugar glass windows the coolest!?
