Easiest Summer Caprese Salad Recipe!
If you are like me, you are strapped for time during these busy summer months managing all the things you need to do alongside being a parent. Eating healthy can sometimes be forgotten when you are in a rush or tired from a full day of activities under the hot summer sun. I frequently reach for that bag of chips or protein bar in the pantry instead of a well-cooked meal. I often forget that I can make a simple meal with just a few extra steps! In the end, I know I’ll feel better and my taste buds will thank me for it too!
I’ve rounded up my favorite easy summer salad recipes starting with this simple Caprese salad you’re sure to love. In fact, I make this on pizza night so I can get that tomato and cheese fix while my family is taking down all the carby bread and it totally hits the spot.
My secret must-have ingredient is a store-bought balsamic glaze. As much as I love a homemade balsamic glaze, this bottle of deliciousness is kept well stocked in my pantry for everyday use.
Caprese Salad Recipe
One large Tomato Chopped (or 1 cup cherry tomatoes)
Sliced Fresh Mozzarella
Salt & Pepper To Taste
Basil Leaves Chopped Or Whole
Balsamic Glaze (about 1 tbsp)
Chop tomatoes, mozzarella, and basil into equal parts. Layer them so each bite can be all three ingredients. Top with a light dusting of salt and pepper. Go light or heavy with the balsamic glaze drizzle.
