Basic Quick Pickling Recipe
I’m always trying to find different ways to use and preserve all my vegetable garden produce. Pickling is one of my favorites! It comes together so fast, it’s beautiful in your refrigerator, and it can bring a whole new level of flavor to so many dishes! You can literally pickle any vegetable or fruit but here is a small list of my favorites! Carrots, cucumbers, any kind of pepper, ginger, mushrooms, onions (especially red), radishes, and turnips.
This quick pickle recipe is basically a marinade. I love this recipe because it’s a great starter for anyone who wants to dip their toes into the world of pickling and jarring. The longer your pickles stew in the brine, the more flavorful they will be. Fresh and crisp vegetables are best for pickling. Note that the softer the produce like cucumbers, the quicker they will marinate. Carrots on the other hand will take a few more days. Once you’ve tried this basic recipe, you can experiment with different kinds of vinegar, and flavor combinations!
Basic Quick Pickle Recipe:
Ingredients:
- 1 Cup Apple Cider Vinegar
- 1 Cup Water
- 1 Tbl Sugar
- 1 Tbl Salt
- Produce of your choice, washed and cut into spears/diced or whole.
- Optional Common Flavor Additions: Garlic, Herbs: Dill, Rosemary, Thyme, Pepper Corns, Chili Flakes.
Directions:
- In a saucepan, stir together the vinegar, water, sugar, salt, and any seasonings you want to add.
- Bring to a boil, set aside to cool
- Wash and dry your vegetables and glass jars/lids.
- Cut your vegetables and add them to the jars.
- Pour your brine over your vegetables, covering them completely.
- Tightly add your lid, and refrigerate for at least 24 hours and keep for up to a few months.
