Hoppy Easter! Peter Rabbit and veggie gardening continue to be my main inspiration for Easter and Springtime dinner styling. It’s the perfect setting for meals if you are a vegetable gardener and want to spend a little extra time near your hard work. I also love how easy a table that’s food-centric can be to put together. Bloody Marys

The only vegetable drink fit for this table spread! They’re really easy to make with tomato juice and vodka and I love playing with garnish to add an element of drama to the table. I went simple with an Old Bay rim and stalks of celery but there are endless possibilities like my favorite, pickled vegetables for this pretty drink.

Salad Appetizers

I felt it was only appropriate to do a salad appetizer in these Bordallo Pinheiro cabbage bowls. Microgreens, radishes, and rainbow cherry tomatoes for color, and a mix of seeds and nuts for extra crunch!

Veggie Focaccia

These personal focaccia loaves were so much fun to make with leftover vegetable scraps as decorations/toppings. Parsley works great as stems and leaves while rainbow cherry tomatoes are perfect for little tulip flowers. You can get my focaccia bread recipe here. To make mini loaves like these, simply divide your dough into four parts.

Match The Party!

I found this embroidered top by Maeve at Anthropology and if you’re crafty, make your own jewelry pieces with vegetable-themed charms you can find on Etsy, or make your own out of polymer clay! I think this would be a fun party activity to do with friends! I found these particular charms made out of glass on Etsy by a talented artist, The Glass Bunny.

Dessert!

I love tarts in spring and summer. They’re so refreshing and you can load them with berries for extra flavor and garnish. I tried a lime tart with my simple tart recipe and it was just as delicious as a lemon tart. If you are unfamiliar with tart baking, once you have basic formulas down for crusts and fillings, changing flavors and additions are as simple as cookies. Check out my lemon tart recipe here and if you want to try the lime, swap out the lemon for lime or try key lime! I decided to try the popular graham cracker crust for this bake and it did not disappoint in flavor, stability, texture, and ease!

Graham Cracker Crust

Ingredients:

  • 12 whole graham crackers
  • 1/3 cup tightly packed brown sugar
  • 4 Tbl unsalted butter, melted

Directions:

  1. In a food processor, process the graham crackers into a fine crumb.
  2. Add the brown sugar and process until well combined.
  3. Add the butter and process until a very rough and crumbly dough forms.
  4. Pour the crumbly dough into a tart pan and press into the sides and bottom with your fingers and then with the back of a cup to create a 1/4-inch thick crust.
  5. Blind bake for 10 minutes, set aside to cool before adding the filling.
