Goat Cheese & Rainbow Tomato Tart
This summer, serve up a gorgeous goat cheese and rainbow tomato tart! This is an easy few ingredient recipe but it’s sure to please all the tomato lovers in your life. I loved picking out an array of heirloom tomato colors for this visual foodie art. I recommend a trip to your local U-Pick or Farmer’s Market for the freshest ingredients!
Goat Cheese & Rainbow Tomato Tart
Serves: 8 People
Ingredients:
- 1 sheet frozen puff pastry
- 8 oz goat cheese
- 4 large heirloom tomatoes in various colors
- 1 cup cherry tomatoes
- 1/4 cup fresh basil leaves
- 1 egg, whisked
- optional: 1/4 cup edible flowers
Directions:
- Preheat the oven to 400F.
- Slice the tomatoes and set them aside.
- On a baking sheet lined with parchment paper, roll out a sheet of cold puff pastry dough.
- Spread goat cheese evenly over the puff pastry leaving a one-inch border around the edge.
- Place the tomato slices to create a colorful arrangement.
- Brush the edges of the pastry dough with a whisked egg.
- Bake for 20 minutes or until the tart crust is baked all the way through.
- Let cool before adding basil leaves and flowers. Serve warm!
