It’s birthday time for our little home slice! We are stuck in quarantine but I still wanted to celebrate and make this 8th birthday special. I racked my brain for easy ideas I could pull off from the safety of our home. And something that he could look back and be reminded of during this time in his life. I finally got inspired by his quarantine favorite, my homemade pizza recipe. Here he is with the shaggiest head of hair after almost 6 months of staying at home! The Invitations.

I always have fun making his invitations and I didn’t want to skip them. So I made a fun pizza inspired invitation set for one. I delivered it to him when he woke up so he could be formally invited to his own party. He didn’t know what his party was going to be until I gave him his invitation and the shirt.

Personal Pizzas!

This recipe is for the best pizza dough I’ve ever tasted. It was a labor of love to create during the quarantine. You can find it here: Homemade Pizza Dough Recipe. I divided it into 4 parts for these personal-sized pizzas. After they fermented in the refrigerator for a few days, we baked them with our own favorite toppings.

Matching Wrapping Paper

I like to find subtle ways to add to a cute theme for kid’s parties. The chef hats and pizza name tags were all I did for the table other than the actual pizzas which doubled as table decor. I found this adorable wrapping paper on amazon! And matched all his presents to the party theme.

Dessert!

There was ONE custom thing I had to have, adorable pizza macarons. I found them on Believe Cakes’ Etsy shop. She has so many fun macarons and she ships!

This s’mores pizza was a huge hit with the birthday boy! It was super simple to put together from scratch while he was swimming in the pool. So I was able to serve it up right out of the oven, yum. Check out the recipe below!

S’mores Pizza Recipe

Makes: 1 pizza, 6-8 slices/servings

Ingredients:

  • 1 cup graham cracker crumbs, divided
  • 1 1/3 cup all-purpose flour
  • 1/4 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar, tightly packed
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cup semi-sweet chocolate chips
  • 2 1/2 cups mini marshmallows
  • chocolate syrup and/or other chocolates for drizzling/topping (optional)

Directions:

  1. Preheat the oven to 350F. Line an aluminum baking sheet with parchment paper and set aside.
  2. Using a food processor, finely process the graham crackers into fine crumbs. It will take 1 package of rectangle graham crackers.
  3. In a medium bowl whisk together ¾ cup of graham cracker crumbs, the flour, and baking soda.
  4. In the bowl of an electric stand mixer, cream together the butter, sugars, and salt.
  5. Add the egg and vanilla and mix until combined.
  6. Add in the dry ingredients and slowly mix until fully combined.
  7. Using your fingers, press the dough onto the parchment paper-lined baking sheet to form an extra-large round circle. About a 1/8″ in thickness.
  8. Use a fork to pierce the dough all over.
  9. Bake for 15-18 minutes or until the crust begins to brown and is baked through.
  10. Remove from the oven and immediately sprinkle with the chocolate chips, leaving a rim around the outside untouched for the pizza crust.
  11. After a few minutes, the chocolate chips will have warmed enough to spread out smooth like pizza sauce.
  12. Sprinkle the remaining ¼ cup graham cracker crumbs, then the mini marshmallows and the remaining ¼ cup chocolate chips.
  13. Place under a broiler set to high for 1-3 minutes or until the marshmallows are just browned. Watch closely so the marshmallows don’t burn.
  14. Remove from the oven and drizzle with chocolate syrup and any other toppings you enjoy. I love chopped peanut butter cups on my slice!
