Grilled Romain Salad
My wonderful friend turned me on to grilled romaine lettuce recently and I have been grilling it up for lunch and dinner ever since! Her recipe is as easy as it gets with just a few ingredients, you can whip this healthy and flavorful concoction up in no time. What I love about salads is that you can make them your own without much culinary knowledge. This rendition of my friend’s salad is just that, a few extra ingredients that hit my taste buds just right.
The grilled lettuce is the real star here. A smoky flavor with just a little spritz of olive oil. That’s right, this salad has zero extra dressing calories.
Ingredients:
1 romaine head, halved
Goat Cheese
Cherry Tomatoes, halved
Olive Oil Spray
Balsamic Glaze
Salt & Pepper to taste
Directions:
Wash and dry a head of Romain lettuce. Cut down the length of the lettuce head to create two halves with a large sharp knife. Spray olive oil on both sides of the halved lettuce and grill each side for about 3-4 minutes. Transfer to a plate and season lightly with salt and pepper, a drizzle of balsamic glaze, a healthy portion of goat cheese, and cherry tomatoes. This recipe makes two salads.
